
I love this healthier version of the classic banana bread but with some added protein!
Tips
- Cover pan with foil when baking for the last 10-15 minutes so the bread doesn’t become too dark on the top
- Do not over mix the batter or the texture will be off
- Use dark brown bananas for the sweetest flavor
Ingredients
3 large, overripe bananas, mashed
½ cup honey, maple syrup, or cane sugar
2 tsp vanilla
2 eggs
⅓ cup plain greek yogurt
1 stick butter, melted
⅓ cup collagen peptides or protein powder
2 tsp baking soda
½ tsp salt
1 ½ cups all purpose flour
Directions
Preheat oven to 350 degrees.
Combine bananas, honey, vanilla, eggs, and yogurt in a mixing bowl and mix well. Add melted butter. In a separate bowl, stir together flour, baking soda, salt, and collagen peptides. Slowly add dry mixture to the wet mixture until just fully combined.
Grease bread pan. I like to use mini loaf pans for this! Fill pans ½- ⅔ full.
Bake for 30-35 min for mini loaves (makes 4) or about 1hr for a regular sized loaf pan. Make sure a toothpick comes out clean before removing from oven.
I recommend cooling the pan for at least 30 minutes before slicing.
